Cheesie Whole Wheat Dinner Rolls

Happy Monday Fellow Foodies!

Today I am making a large pot of veggie stew. I decided that something more was needed "fill out" dinner. So I am making rolls. This is a great recipe that requires only a little work for a lot of return. Give them a try, you will love them as much as I!!!

Before you begin, though, I would like you to consider your flour. Please use a high quality flour. I use King Arthur brand flour exclusively. You can find it in most grocery stores these days, but if you cannot find King Arthur flour in your area their website is brilliant! http://www.kingarthurflour.com/


Cheesy Whole Wheat Rolls

2 cups bread flour
3 cups whole wheat flour
1 tsp salt
1 cup water
1/3 cup sugar
1 cup milk
1 Tbs. yeast
1/4 cup olive oil
8 sun dried tomatoes-diced
4 to 6 ounces of shredded cheese of your choosing

Place the flours and salt into your mixer with the dough hook attachment in place. Boil water and sugar together to make a syrup. Add the COLD milk and stir. Add the yeast and whisk very quickly, and pour into the flour mix. Turn the machine onto the knead setting. add the olive oil and sun dried tomatoes and allow to mix for 5 minutes. Add the cheese and knead for 1 minute more, until the cheese has been fully incorporated.

Break the dough into 2.5-3 ounce pieces. You should get 22-25 pieces.

Roll the dough into balls, cover with lightly oiled saran wrap, and allow to rise for 1 hour. Spray a little water on the tops of your now risen dough balls, and sprinkle with a little Kosher salt.

 Bake at 375*F for 20 minutes. Brush with melted butter and serve to a very happy family!
