Chicken Pesto with Asparagus-A Kid-Friendly way to get your Wee One to eat Asparagus
This has become one of my favorite go-to dinners. It's delicious, easy, and even my 10 year old loves it-so I consider it "Kid-Friendly".
Chicken and Asparagus with Pesto
2-3 chicken breasts: cut lengthwise into quarters
1/3 cup julienned sun dried tomatoes packed in oil
2 cups cherry tomatoes halved
1 bunch green onions, minced
1 Lb. asparagus tips
1/4 cup pesto sauce
2 cups cooked pasta
Preheat your oven to 450F. Heat a cast iron-or other oven safe skillet over medium high heat.
Add the sun dried tomatoes with the oil in the jar. Allow to sizzle, add the chicken and cook on each side just until browned (3 minutes per side. Sprinkle on the tomatoes,
then the asparagus, and green onions.
Place the pan in the oven and bake for 15-20 minutes until the asparagus is browned. Pour everything from the pan into a large bowl, add the pesto and toss to coat.
Serve over your favorite pasta of choice.
