Chocolate Mocha Icing



Today is my most beloved husband's birthday. We held a small birthday party for him last Sunday. I made a devil's food cake with cocoa-mocha icing. It was so popular that I wanted to share it with everyone. You will need the aid of a stand mixer for this recipe, but it's is well worth the expense!


Cocoa Mocha Icing
18 ounces butter at room temp
18 ounces powdered sugar (10x sugar)
1/2 cup brewed espresso or strong coffee
1 tsp. vanilla
1/2 cup good quality cocoa powder
Place the butter in a stand mixer with the whip attachment in place. Whip the butter on high speed for 5 minutes (set a timer) until very light and fluffy. add the coffee and vanilla and whip to incorporate. Add the sugar and cocoa powder and whip for an additional five (set a timer) minutes. VIOLA!!! Cocoa-mocha icing from Heaven...Enjoy!!!
