Black Bean Burger

It was a wonderful weekend! "Da Hubby" had Friday off so we took Chloe to the pool for a bit. It was still too chilly to really enjoy ourselves, but the time spent outdoors with Chloe is always worth a few goose bumps. We had friends over for an Indian Dinner of Tandoori Chicken, and just an all-over fun Friday Night. Saturday we went to a birthday party, and yesterday we did church. I soloed Amazing Grace, and did a fair job of it. After church we stopped for some stuff at the butchers and I picked up a copy of the Loop-our local free paper. I opened it to see a picture of Chloe and a nice article about last week's Drop in & Decorate. (Article to follow)

I've been on a hunt for a great vegetarian burger option all weekend as well. With "Grilling season" upon us-I don't wanna be left out of the cook-out action because I am no longer eating meat. Steve and Chloe are still omnivores so there will be many many burgers in our summertime-to-come. Here is the recipe I found and tweaked just a bit to make it to my liking.


Black Bean Burger

2, 15 oz. can of black beans-drained
1 egg or 2 egg whites
½ cup whole wheat bread crumbs
½ tsp. each-cumin, coriander, salt, pepper, and smoked paprika
1/8 tsp. cayenne
OPTIONAL-diced onions, peppers, sautéed chopped mushrooms, roasted corn

Place ¾ of the beans in a food processor. Pulse them until they are broken up and squishy-but not completely pureed. Pour into a bowl. Mix in the rest of the ingredients. Allow to sit in the fridge for about 30 minutes. Shape into patties and grill. Serve the same way you’d serve a hamburger!
